Bananenkuchen

Mixture I:
4 - 5 ripe bananas
2 eggs
100 g organic coconut oil, liquid
2 tsp organic coconut flower nectar
1 tbsp organic coconut vinegar
Mash the bananas with a fork, then add all the ingredients and mix well.

Mix II:
60 g organic spelt flour
30 g coconut flour
50 g rolled oats
60 g coconut chips
60 g walnuts
2 tsp baking powder
1 tsp bicarbonate of soda
Pinch of sea or rock salt
Mix all ingredients together.

Topping:
1 ripe banana, quartered
some coconut chips

Preparation:
Preheat the oven to 180°C and line a 25 cm loaf tin with baking paper. Combine mixes I & II. Empty the batter into the springform pan, then decorate with banana pieces and coconut chips on top. Bake in the preheated oven on the middle shelf for 45 - 50 minutes.
